The Processing Journey

  1. What our Guides do: Once the fish are caught, our guides will fillet them (which includes removing the head, and guts, leaving behind the prime cuts of meat), and after the trip is over, it is important to quickly transport your catch to a local processing facility to ensure the fish remain fresh.
  2. Packaging: After filleting, the fish are packaged. Depending on the client’s request, they may be vacuum-sealed, frozen, or canned. Packaging is done with care to maintain the quality and freshness of the fish.
